Culinary Explorations: The Tomato
Tuesday January 7, 2025 8:30am - 9:45am PST
Exploring the Tomato: Culinary history, cultural influences and tasting tomatoes. We will trace the history of the tomato through world cuisines and learn why it was thought to be poisonous up through the 17th century. Come with a curiosity about food, culture and cuisine and a willingness to sample some varieties of tomatoes.

You will be learning hands-on cooking techniques (knife skills) and making a tomato & cucumber salad (lightly dressed with Balsamic vinegar and olive oil). Food consumed will be vegan and contain no nuts. Please notify the instructor of any food allergies.

Flavors of the Mediterranean: A Cooking & Tasting Adventure

Learn all about Mediterranean food and how fresh herbs, good fats, and balancing the five flavor elements translate into delicious food. We will learn how to make stove-top pizza with fresh tomato basil sauce and homemade dough, herb and olive oil hummus, tiramisu with seasonal fruit compote, and fresh mint lemonade. We will also have some fun tastings with various herbs, cheeses, olives, olive oils, and vinegars.
